Pina Coladas... getting caught in the rain and the assorted spiel, join the club. A spontaneously-planned cocktail party of two last night saw me try my hand at the glamorous role of a mixologist, unfortunately to some not so glamorous avail. This fruity favourite, however, did work out, to my surprise looking and tasting just as it should. Even carb, protein and beer-faithful BF approved, and that's saying something! Now correct me if I'm wrong, but I do believe the simplicity of the recipe may have much to do with this success - a point we don't need to emphasise to our cocktail-happy guests guzzling down these fun and fantastic creations. You too can impress even the most picky of connoisseurs by following this recipe:

30ml White Rum
30ml Coconut Cream
125ml Pineapple Juice

Shake all ingredients with a handful of crushed ice and pour into glass. Garnish with a pineapple wedge or leaf (or, in this case a cheesy paper umbrella).

Voila! Yes. I kid you not, THAT simple.
